Older eggs (7-10 days) peel more easily and cleanly when hard cooked than fresh eggs do.  If you plan to decorate hard cooked Easter eggs and eat them afterward, you may want to buy them now. There's nothing worse than trying to make deviled eggs when the peel pulls off big chunks of the egg white!  Fresh eggs will keep for about 4 weeks in the refrigerator, so you may even want to stock up with the recent holiday sale prices.  For more tips on Easter eggs, check out my Living Well blog on Monday, April 6th.

I'm not much of a cook, but I can boil a mean egg.    Grin

Thanks for the tip on older eggs, despite if they're dyed on not!

I plan on coloring some "hard boiled goodies", if only to re-live my childhood just a bit.

... and I won't forget the wax crayon... for effect.

Ah...that wax crayon brings back memories!  Be sure to use it to write your name on "your" eggs, like we did in my family--saved lots of sibling conflict!

As you decorate and enjoy your hard cooked eggs, remember to keep them refrigerated so they'll be food-safe for eating later.  Try to limit the time out of refrigeration-- for the hunt or to decorate the Easter table or whatever-- to no more than two hours.  Hard cooked eggs will keep in the refrigerator for about a week in their shell; use peeled eggs within 2 or 3 days.

If, when you start you water to boil, you start to chill a bowl of water and put the eggs in it when the are finished boiling it will do two thing... #1 stop the cooking process and #2 make them peel easier and cleaner.

i put a bowl in the freezer to chill the water, then add blue packs when I put the eggs in... Warning it is not advisable to put the eggs in water in freezer.. as my wife found out when she forgot them and they froze... LOL...
